Kick-off Sparkling Wine & Holiday Lights with an exclusive dinner! Enjoy a 4-course meal with bubbly pairings  at Poppy’s Seafood Factory on Friday, November 21st @ 6:30 PM CT! 


Poppy’s Seafood Factory 2025 Sparkling Wine Dinner 

Course 1-  Amuse-Bouche

  • Manchego crisp with quince gelee + rosemary Marcona almond dust
  • Whipped goat cheese phyllo cup with lemon and local honey
  • Paired with Segura Vuidas Brut Reserve Cava, Spain

Course 2- Fall Harvest Salad

  • Roasted butternut squash, vanilla poached pear, mixed baby greens tossed in a champagne honey vinaigrette, finished with candied pecans, pomegranate arils, watermelon radish, and warm goat cheese croutons
  • Paired with Kendall Jackson Vintner’s Reserve Brut Cuvee, California

 Course 3- Fall Vegetable Riss ”OAT” o

  • Steel cut oats cooked risotto style with tender fall vegetables, topped with truffle butter lobster tail, parmesan cheese, and fried sage
  • Paired with Mionetto Prosecco Doc Treviso, Italy

 Course 4- Spiced Apple + Pear Crisp with Pecan Crumble

  • Spiced fall fruits topped with pecan oat crumble, and vanilla citrus whipped Chantilly cream
  • Paired with Charles Lafitte Brut Prestige, France
